Bronx Buns Lobster Roll

Ingredients:

Lobster Salad:
¾ lb. cooked lobster meat, shelled and picked through
2 tablespoons mayonnaise
2 tablespoons salted butter, melted
2 tablespoons finely chopped celery
Zest and juice of 1 lemon (1 teaspoon zest, 2 tablespoons juice)
1 tablespoon finely chopped chives, plus more for garnish
A pinch paprika, plus more for garnish
Kosher salt and freshly ground black pepper, to taste 

For Serving:

3 Bronx hot dog buns
2 tablespoons salted butter, melted  

Directions:

Chop the lobster meat into 1-inch pieces and add to a large bowl. Add mayonnaise, melted butter, celery, lemon zest and juice, chives and paprika. Season to taste with salt and pepper. Cover with plastic wrap and refrigerate until ready to use. 

Brush the hot dog buns with melted butter and toast in a large skillet over medium heat until golden. Divide the lobster filling between the buns. Garnish with chives and paprika before serving.
