OG Soft Pretzel Breakfast Strata
Ingredients:
2 tablespoons unsalted butter
1 yellow onion, diced
1-pound breakfast sausage, casings removed (about 16 sausages)
4-ounces baby spinach
8 large eggs
1 ½ cups whole milk
Kosher salt and freshly ground black pepper
1 cup grated white sharp cheddar cheese
4 cups chopped pretzel (1-inch pieces)
3 tablespoons chopped chives, garnish
Directions:
Preheat the oven to 425 degrees F.
Heat a large skillet over medium heat and add butter. Add onion and cook until translucent, about 5 minutes. Add sausage, breaking up into bite-sized pieces and cook until browned, about 8 minutes. Remove from heat, add spinach on top and allow to gently wilt.
Whisk together in a large bowl eggs, milk, salt and pepper. Add in half of the grated cheese. Set aside.
Toss the pretzel pieces with the sausage and spinach mixture. Divide evenly between 4 (6-inch) ramekins. Pour egg mixture over the top, dividing evenly between ramekins. Top with remaining grated cheese. Bake until puffed and brown, about 15-20 minutes. Garnish with chopped chives before serving.
