Triple Onion Dip
Ingredients:
1 tablespoon unsalted butter
1 large yellow onion, chopped
2 scallions, white and green parts divided, thinly sliced
½ cup avocado oil
3 shallots, thinly sliced
1/4 cup cream cheese, softened
1 cup sour cream
1 tablespoon fresh lemon juice
1/2 teaspoon Worcestershire sauce
1 garlic clove, minced
1/2 teaspoon salt or to taste
1/4 teaspoon freshly ground black pepper or to taste, plus more for garnish
Dill sprigs, for garnish
Pretzel bites, for serving
Directions:
Melt the butter in a skillet over medium heat. Add the onion and scallion whites. Cook over medium heat until very soft and caramelized, about 30 minutes, stirring occasionally.
Meanwhile, fry shallots. Combine avocado oil and sliced shallots in a small saucepan. Heat over medium heat, stirring occasionally, until golden brown, about 15 minutes. Drain on a paper towel lined plate and sprinkle with salt. Set aside to cool.
Whisk the cream cheese until light and smooth, then stir in the sour cream, lemon juice, Worcestershire sauce, garlic and scallion greens to combine. Add in the cooled caramelized onions, salt, and black pepper and taste for seasoning. Garnish with the fried shallots and dill sprigs.
