Buffalo Chicken Dip
Ingredients:
8 ounces cream cheese, room temperature
½ cup buffalo sauce
¼ cup ranch dressing
2 cups shredded cooked chicken
½ cup blue cheese crumbles
8 ounces sharp yellow cheddar cheese, grated (about 2 cups)
6 scallions, thinly sliced

Directions:
Preheat oven to 400 degrees F.
In a medium bowl combine cream cheese, buffalo sauce and ranch dressing until smooth. Stir in shredded chicken, blue cheese crumbles, 1 cup cheddar cheese and half the scallions.
Spread into a cast iron skillet and top with remaining cheddar cheese. Bake until the cheese is melted and the dip is bubbling, 15 to 20 minutes. Remove from the oven and allow to rest 5 minutes before serving. Sprinkle with remaining scallions and serve with pretzel sticks for dipping.
Notes: Serve with a pint of beer.
