Panzanella Salad With Big Apple Bites
Ingredients:
6 cups pretzel bits, toasted
2 large, ripe heirloom tomatoes, cut into 1-inch cubes
1 hothouse cucumber, seeded, sliced into ½-inch thick half moons
1 red bell pepper, cut into 1-inch cubes
1 yellow bell pepper, cut into 1-inch cubes
½ red onion, thinly sliced
Basil leaves, for serving
Arugula, for serving
For The Vinaigrette:
3 tablespoons white wine vinegar
1 large garlic cloves, minced
½ teaspoon Dijon mustard
½ cup olive oil
Kosher salt and freshly ground black pepper, to taste
Directions:
In a large bowl, mix the tomatoes, cucumbers, bell peppers, red onion, basil and arugula. Add the toasted pretzel bites and toss with the vinaigrette. Season with salt and pepper.
