Muffaletta Sandwich with The Brooklyn Beast
Ingredients:
Homemade Olive spread:
½ cup chopped pitted green olives|
½ cup chopped pitted Kalamata olives
1 (3-ounce jar) pimentos, drained
¼ cup chopped fresh parsley
¼ cup extra-virgin olive oil
2 cloves garlic, minced
2 tablespoons white wine vinegar
1 teaspoon dried oregano
Freshly ground black pepper, to taste
Sandwich:
4 Brooklyn Beasts buns, sliced in half lengthwise
Homemade Olive Spread
6 ounces soppressata, thinly sliced
8 ounces provolone, sliced
6 ounces deli ham, thinly slices
6 ounces mortadella, thinly sliced
6 ounces salami, thinly sliced
Olives on toothpick, for serving
Directions:
Homemade Olive Spread:
Combine olives, pimentos, parsley, olive oil, garlic, vinegar, dried oregano and pepper in a large bowl. Toss to combine. Set aside to marinate.
Sandwiches:
Assemble Muffuletta. Hollow out the top piece of the bun by removing some of the soft bread on the inside, leaving a ½-inch of bread near the crust. Spread half of the olive spread on the bottom bun. Layer with the meats and provolone cheese. Spread remaining olive spread on top of last layer of meat and top with the hollowed out top bun. Press down lightly and allow to sit for 10 minutes.
