Caprese Sandwich with Brooklyn Beast Buns
Ingredients:
Homemade Basil Pesto:
2 cups packed fresh basil leaves
2 garlic cloves
¼ cup pine nuts
½ cup freshly grated Parmigiano Reggiano
⅔ cup olive oil
Kosher salt, to taste
Sandwich:
4 Brooklyn Beast buns, sliced in half lengthwise
Homemade basil pesto
2 medium heirloom tomatoes, sliced ¼-inch thick
8 slices fresh mozzarella, sliced ¼-inch thick
Fresh basil leaves
Directions:
For the basil pesto:
Combine the basil, garlic, and pine nuts in a food processor. Pulse until coarsely chopped and add 1/2 cup oil. Process until fully incorporated and smooth. Season with salt to taste. Set aside.
For the sandwiches:
Slice buns in half and spread pesto on the cut sides. Layer the cheese, tomatoes and basil and top with top bun.
